Vorbereitung
Heize deinen Backofen vor, und zwar auf 180° (Ober- und Unterhitze). Fette eine Springform ein und bestäube diese mit Mehl. Anschließend kannst du das überschüssige Mehl von der Springform abklopfen.
Zubereitung Teig
Zuerst schälst du die Möhren und raspelst sie in ganz feine Stücke. Danach trennst du die Eier und schlägst das Eiweiß steif. In einer Schüssel verrührst du mit einem Handmixer nun die 5 Eigelbe zusammen mit dem Zucker, dem Vanillezucker und der Prise Salz. Anschließend rührst du den Rum unter die Masse. Nun kannst du das Mehl mit dem Backpulver vermischen und zusammen mit der Hälfte der Mandeln ebenfalls unter den Teig rühren. Dann kommt der Eischnee. Den hebst du vorsichtig unter den Teig, eben so, dass er nicht zerfällt. Anschließend fügst du die restlichen Mandeln und die Möhrenraspeln hinzu.
Backen
Fülle den Teig in die Springform und backe ihn im unteren Drittel des vorgeheizten Backofens. Nach etwa 60 Minuten kannst du den fertigen Kuchen herausnehmen. Lass ihn kurz abkühlen, bevor du ihn aus der Form löst.
Zubereitung Kuchenguss
Siebe den Puderzucker und verrühre ihn mit dem Rum. Anschließend rührst du die zerlassene Butter unter und überziehst den Kuchen mit dem fertigen Guss. Wenn du magst, kannst du alles mit einer Deko-Möhre aus Marzipan verzieren.
